They're so committed that they fry each one of their burgers in grease that has been lovingly preserved and used for 100 years. Assignment #142 in the 365 Things to Do in Memphis is to eat a Dyer's burger. As far as I can tell, the legend of the 100 year old grease is true. When the diner moved to Beale Street, the sacred grease came, too.
