Officially open at Crosstown Concourse—right in time for Lunar New Year—Bao Toan has transformed the former Wolf River Brisket space into a vibrant, immersive dining experience.

Before you even step inside, the restaurant sets the tone. The entrance feels like a bustling street in Vietnam, complete with bold pops of color and a rickshaw—a nod to the traditional two-wheeled vehicles often pulled by hand.
“We wanted to give Memphians the feeling of being transported to Vietnam,” said Margaret Tong, one of the owners. “Much of the decor was made there, and our mural at the front showcases different regions of Vietnam. Even the hallway to our restroom is designed to feel like a Vietnamese marketplace.”

The menu is inspired by dishes the family grew up eating—curated to showcase the diversity of Vietnamese cuisine.
“We pulled flavors from different regions so people can experience the contrast between northern, central, and southern Vietnamese food,” Tong explained. “Northern dishes highlight fresh herbs and balanced flavors, while central and southern cuisine incorporates more spice and influences from bordering countries.”
If it’s your first time at Bao Toan, Tong suggests trying the Bao Bao shrimp, Bo Luc Lac, Bo Tai Chanh, Ma’s Ribs, or Thit Kho—all solid picks for newcomers.
For more adventurous eaters? Cha Ca Thang Long, a sizzling turmeric and dill marinated fish with noodles and herbs, is a must-try.
“It’s a really refreshing dish,” she said. “I’d also recommend the whole fish. Many of our guests aren’t used to eating fish that way—head-on, not filleted—but in our culture, we eat every part except the bones.”

Bao Toan is the latest venture from a family well-established in Memphis’ food and business scene. They also run Mochi and Mi in Southaven, Gloss Nail Bar, and more. While Tong and her sister, Diana Aiken, handle the business side, their mother, Karina Pham, and sister, Chloe Tong, bring the kitchen to life.
“It’s more than just a restaurant,” Tong said. “It’s a reflection of our family’s love for food and our deep connection to Memphis. We take pride in sharing our heritage with this community.”
Don’t hesitate to ask a lot of questions during your visit. Tong said most of the dishes have a story behind them waiting to be learned.
