Yes, Fuel's food truck is back out-and-about in the city! How grand. You can sometimes get avocado and bacon added to this baby.

Fatboy From Uncle Lou's Fried Chicken

I know it seems strange to go to a fried chicken joint and get a sandwich like this—but listen, you can also get fried chicken in addition to the Fatboy because no one's stopping you. It's three pieces of Texas toast layered with four slices of cheese, plus turkey or ham.

Obviously, Say Cheese knows what's up when it comes to grilled cheese sandwiches in Memphis. Find this local food truck and find happiness. Pictured here is the classic, but you can go for pepperoni, buffalo chicken or any number of variations.

If you want to seriously level up your grilled cheese, throw some lobster on there! That's what the locally-owned edition of the Cousins Maine Lobster food truck does.

Grilled Cheese From Fries Guys Food Truck

They're on a hiatus at the moment, but Fries Guys food truck combined the three major food groups (bread, cheese, and potatoes) and combined them into one stellar meal. Get a grilled cheese (plenty of variations available with chicken, bacon, pesto, etc.) and side of hand cut French fried po-ta-toes.

River Oaks has a DIVINE beef short rib grilled cheese. I ask them to add a slice of tomato before it goes in the panini press. YUMMY!
