365 Things to Do in Memphis #113: Eat Sustainably at a PGF Restaurant

If you've eaten at Muddy's Bakeshop, Acre, Central Barbecue or Yolo, you may have completed assignment #113 in the 365 Things to Do in Memphis without even knowing it. All of those restaurants (and 39 more) are certified sustainable by Project Green Fork.

Project Green Fork was founded in 2008 to help make Memphis restaurants more environmentally sustainable. In the past four years, they've grown from 14 certified member restaurants in April, 2010 to 43 certified restaurants in April 2012. The member restaurants range from the high-end (Restaurant Iris, Andrew Michael Italian Kitchen, Acre) to the super casual (R.P. Tracks, Huey's, Central Barbecue).

Before a restaurant receives its Project Green Fork certification, the organization works with them to reduce their engergy consumption and waste and switch to using more locally grown and sustainable ingredients. To date, PGF restaurants have recycled 430 metric tons of cardboard and paper and 920,000 gallons of plastic, glass and aluminum.

I hate to be this guy, but they'd need quite a few more restaurants before the growth could be called 'exponential' ;) But thanks for the excuse to head over to Cenral BBQ...
