365 Things to Do in Memphis #142: Eat a Burger Fried in 100 Year Old Grease

Updated May 2018 As Memphians, we take our fried food seriously. Few, though, take it more seriously than the crew at Dyer's. They're so committed that they fry each one of their burgers in grease that has been lovingly preserved and used for 100 years. Assignment #142 in the 365 Things to Do in Memphis is to eat a Dyer's burger.  As far as I can tell, the legend of the 100 year old grease is true. When the diner moved to Beale Street, the sacred grease came, too. Every time a new batch of grease is needed, some of the old grease is mixed in with it. Every night at closing time, the grease in the pan is covered with a lid. Every morning, the grease is strained and seasoned. Dyer's is serious about the grease. If you go to Dyer's expecting a big, thick patty with lots of lettuce and tomatoes., you're going to be disappointed. This is no place for gourmet burgers, fancy cheese, hipster-infused aioli, or grass-fed anything. If you're looking for a good, thin, fried Southern burger (the kind with a ton of pickle slices, mustard and onion), you're in the right place.
