Praise the Lard: Cochon555's Pork Festival Comes to Memphis

Last Saturday's Cochon555 event at One Commerce Square might have been a little preview of what heaven is like. At least, it's is the first party I've ever been to where the centerpieces were made of bacon. If that's not heaven, I don't know what is.*

Think of Cochon555 as the legendary rock'n'roll concert tour of your dreams, only with high-end chefs preparing humanely-raised pigs instead of a band. And instead of just watching, you get to eat all of it and wash it down with five different wines (and some bourbon and beer).

I was worried (comically so) that when I went to Cochon on Saturday night, there wouldn't be enough food for the sold-out crowd. There was plenty, and virtually no waiting in line to try it. The only line that I wound up waiting in was the line to try the popcorn gelato from Memphis-based Andrew Michael Italian Kitchen. And I can honestly tell you that every single second I spent standing in that line was worth it. Very, very worth it.

There were pork tacos and mortadella that was displayed inside a hollowed-out pig head. There was stew and meatballs and pieces of grilled bacon impaled on toothpicks with meat juice chasers (it sounds way more disgusting than it was). Kelly English (of Restaurant Iris) made "grit and grind", which as a cup of grits topped with some amazing ground pork.

A few times, I had no idea what part of the pig I was eating, but everything was so good that I didn't really mind.

Cochon was founded in 2009 as a way to bring attention to heritage breed pigs and the farmers that raise them. At each stop on the Cochon555 tour, five regional chefs prepare and serve five pigs nose-to-tail (read: the whole pig is used) with five wines. It's a competition, so at the end of the night, the eaters and special guest judges voted for the winner (in this case, Memphis' own Kelly English), who will compete at Grand Cochon this fall.

If you missed Cochon555, don't worry. The team that hosted it will be back in Memphis over Labor Day weekend to hold their first annual heritage pork barbecue festival.

*Unless, of course, you don't eat pork. Then, I suppose heaven has something equally good on the tables for you.

I really enjoyed Cochon555 and everything I had was wonderful. Loved that Memphis was on the food lover map with this event.  Also so pleased to find that Little Rock has a great chef at the Capitol Hotel - will definatly try that the next time I am over that way. My only disappointment was that I didn't get to tryy Kelly English's food as they were out by the time I got to that corner of the room and it was not even 6:45.

In June, there will also be another chef tasting party featuring Kelly English and other regional chefs, benefitting LeBonheur. I think it is June 30th.

Was a pleasure finally meeting you at the Cochon event, and thank you for tasting our food.  I really hope you stop by Andrew Michael Italian kitchen soon so we can really cook for you!!!  hope to hear from you soon!   Aaron (The mustache guy)
