As Memphians, we collectively love barbecue. We also have a mass fondness for fried things. Why, then, has it taken me so long to find a place that combines our loves into one efficient food item?
Behold the fried ribs from 10 Bones BBQ:
They’re like normal ribs, but lightly fried. The meat is more tender than an R&B song, but with a light, crispy shell. The sauce is a little sweet, a little spicy and thick enough to cling to your fingertips.
