Want to know how wonderfully moist La Chica Bakerita's pastel de tres leches is? When I cut my first piece, there was milk left in the pan. When I pushed down on it with my fork, cream came out like I was squeezing a sponge. It's almost like eating and drinking at the same time.

The three-milk cake was made by Leslie Ginn, a high school Spanish teacher who bakes cookies, cakes and brownies as La Chica Bakerita (the little baker girl). She launched the bakery at the end of the school year to raise a little extra money to adopt a child.

If she's got a signature sweet, it's the Cinco Chocolate Chunkies, cookies stuffed with five different kinds of chocolate. The brownies are good, too - I tried one of her "experiment brownies", a dense, bittersweet chocolate delight that would be perfect with coffee.

Currently, La Chica Bakerita is cooking and selling her desserts at Buckley's Lunch Box in East Memphis. She also takes orders through her blog that can be picked up at Buckley's. Leslie said she's considered opening an actual bakery, but isn't ready to give up teaching. "There's a path I'm on," she said, "but I'm not exactly sure what it is yet."

Thank you so much, this was very interesting. I was actually born in Madrid (I'm not telling when though!) but moved around various parts of europe and finally settled in the UK when I was 7. I dont remember much of the few years I was in spain, but the smell of spanish food always seems to get me going or something. It's weird how I dont remember anything except the smells, isn't it! I actually found a whole website dedicated to spanish recipes, which gave me great delight and thought I ought to share. Anyway, thank you again. I'll get my husband to add your cast to my rss thing...
